Last year, my friends and I decided we deserved a spa break. After much discussion around dates and venues, plus one cancellation and re-booking, our trip finally became reality and the four of us met up in a hotel near Southampton for some much needed pampering, relaxing, chatting, eating, drinking … and repeat.
The spa had more kids than we really wanted to see (we had ditched ours for the weekend!), the food was nice enough but nothing amazing (and £6.50 for a bread basket of basic sliced bread!!!), but it was such a tonic because we were on holiday, taking care of ourselves, and having fun with friends. And … can you believe it … we had good weather!

In other news, I am still refining this recipe. I think I need to test it one more time and then I will be able to type it up and share it with you. It’s still Andrew’s favourite meal!
Chicken Kiev pasta bake
This is a Hairy Bikers recipe which is frankly delicious. In a nutshell, bake some chicken thighs in a tray with some sliced onion and olive oil while you boil some pasta. Blitz garlic, parsley and cheese together. Mix it all up, top with breadcrumbs and bake, and voila, you have the flavour of chicken Kiev mixed with pasta.
A shopping fail
This week I was so focused on my spa weekend that I forgot to edit my bog standard Ocado order, or meal plan in advance, so I now have dozens of eggs to eat for breakfast or lunch every day, and will be freezer diving for dinners!

- Thursday – pork chop traybake

- Saturday – fish curry
- Sunday – roast dinner
