As you might expect from someone as greedy as me, I’ll rarely miss a meal, and breakfast is no exception. As I tend to go to morning classes at the gym three times per week, I need a decent breakfast to fill me up when I get to the office.
I’ve tried various different options, including porridge, fruit salad, yoghurt and granola and crackers with ham, but my absolute favourite is scrambled eggs with vegetables.
However, each time anyone in the office has noticed me making them, they have been shocked that such a breakfast can indeed be made in the office in a microwave. Of course, if I was making this at home I’d cook them on the hob, but as long as you keep an eye on your eggs, they can be made in the microwave, and I promise you: these are tasty eggs.
This is a step by step guide to how I make my scrambled eggs. The work microwave default setting is 800 power (probably ‘medium’ on most microwaves as it’s a bit slow). The ingredients given are purely a guide – use any veg which can be quickly steamed in a microwave, and I sometimes add chopped ham to my eggs as well. Please always use free range eggs.
