Week 38 – holidays are coming

In just a few days we’ll be heading off on our holidays, and whilst I am really looking forward to exploring Centerparcs, I can’t help thinking about how our holidays have changed since the arrival of little Ioan.

We always booked our big holiday at this time of year and my Facebook memories is full of bragging about Boston, Cape Cod and Martha’s Vineyard, Mauritius, Mexico, Vegas and Oman. Longleat doesn’t seem quite as, well, exotic …

But our holiday will be full of fun – we’re not going to be at work, and there will be plenty of opportunities to entertain Ioan with our adventures.

So as we’re going to be out and about, and then away, I don’t have a fixed menu plan for the coming weeks. We did treat ourselves to some goodies from Marks & Spencer for some easy meals, and we’re also going to afternoon tea at the Shard this week while Ioan is at nursery. I can’t wait!

So a few meals planned for the coming days are as follows:

  1. A Chinese banquet care of Mr M&S
  2. Breaded chicken with new potatoes and corn on the cob
  3. Burgers and homemade chips
  4. Pasta in homemade tomato sauce

The homemade tomato sauce is out of the freezer, following some batch cooking of a delicious mix of heirloom tomatoes which we bought from Ally Pally and which started to turn before we could eat them in a salad. I sweated the mixture of tomatoes down with garlic and onion:

And then blitzed it in my Froothie Optimum g2.3 Platinum Series induction blender*:

Meanwhile Ioan got his first taste of chicken curry and rice last week, which he loved. I loved the mess less … it’s funny to see him eat with pleasure (although I think 95% of the food ends up down his front), but less funny when he decides he is finished and flings his bowl across the room.

We also had another cheeky meal from M&S of Thai style crispy chicken with pancakes. So nice and simple, and so easy to replicate at home.
